Recipe: Peach Cobbler

Cobbler is an underrated food. Both because it’s an easy way to use up fresh fruit and one of the easiest to make desserts which is naturally not fussy. This one is topped with a delicious but not too sweet top allowing the sweetness of the peach to come out by itself.

Peach Cobbler
  1. 6 peaches, sliced in to 1" pieces
  2. 2 tbsp brown sugar
  3. 2 tbsp white sugar
  4. 1/4 tsp cinnamon
  5. pinch nutmeg
  6. 1 tbsp corn starch
  7. 1 1/2 cups all purpose flour
  8. 1 tbsp baking powder
  9. pinch salt
  10. 2 tbsp sugar
  11. 4 tbsp cold butter
  12. 3/4 cup milk
  1. Preheat oven to 350 F.
  2. Combine the sugars, spices, and corn starch then toss with the peaches.
  3. Place the mixture in a 1 1/2 quart baking dish.
  4. Make the topping by whisking together the flour, sugar, salt, and baking powder then blending in the butter until it resembles coarse crumbs.
  5. Stir the milk in and mix with a wooden spoon (or your hands if you're me).
  6. Drop spoonfuls of dough evenly over the peaches and bake at 350 for about 40 minutes, or until the topping is golden brown.
  1. I added some cardamom and allspice to the mixture but you can adjust it to your taste naturally.
