Recipe: Peri Peri Chicken

This is just a delicious marinated chicken dish. It’s got a nice amount of spice to it but isn’t too overwhelming. This was a big party pleaser and it’s easy to prepare a lot. It’s probably especially nice if you have a grill but I used the oven and it worked out fine.

Ingredients
  1. 1 kg boneless skinless chicken thighs, cut in to 5cm pieces
  2. 60ml olive oil
  3. 1 small red onion, diced
  4. 1/2 red pepper, diced
  5. 1 jalapeno chopped, seeds removed
  6. 1 tsp chili pepper
  7. 4 garlic cloves
  8. 1/2 tsp basil
  9. 1/4 tsp oregano
  10. 1 teaspoon smoked paprika
  11. 1 lemon, juiced
  12. salt and pepper, to taste
Instructions
  1. If you're using wood skewers, soak them in water for an hour.
  2. In a blender or food processor, blend together onion, red pepper, jalapeno, chili pepper, garlic, basil, oregano while drizzling in the olive oil until it makes a paste.
  3. Once blended mix in paprika, lemon juice, salt and pepper to taste.
  4. Marinate the chicken sealed in a plastic bag or container for at least 2 hours.
  5. When ready to make, place the chicken pieces on the skewers.
  6. Grill on an oiled grill over medium heat for 10-15 minutes, flipped halfway OR bake in an oven at 175°C for 20-25 minutes, flipping halfway.
