Recipe: Pesto Rolls

A fun side dish or a perfect handheld party food that feels like it was a lot of work and looks impressive but actually takes just a few minutes of effort to make AND is pretty cost effective. Combining just three ingredients it’s a no nonsense recipe that just tastes good.

Ingredients
  1. 2 sheets puff pastry, thawed
  2. 1 egg
  3. 2 tablespoons water
  4. 1/2 cup pesto
Instructions
  1. Preheat oven to 180°C and line a baking sheet with parchment paper.
  2. Unroll the puff pastry sheet and gently use a rolling pin to thin the sheet to half width.
  3. Spread the pesto on the puff pastry leaving some room at the edge.
  4. From the short end, roll the pastry dough in to a tight circle and use a sharp knife to cut the roll into 1.5 cm slices.
  5. Beat the egg and water together in a small bowl and brush the egg wash on top of the rolls.
  6. Bake for 10-12 minutes or until golden.
Notes
  1. I don't think it's worth making pesto from scratch for this recipe because it's baked you really won't be able to tell the difference between fresh and jarred so I would suggest saving yourself the effort unless you have leftover pesto on hand.
