Unlike my other pretzel recipes for softer type pretzels, these come out with the hard tack shell of the outside and the just soft inside like you’d see in a pub. They’re perfect for dipping, game night, or serving as a fun side with a thick soup.

Dough
- 315 g all purpose flour
- 6 g salt
- 5 g sugar
- 12 g yeast
- 235 ml warm water
Soak and Topping
- 120 ml warm water
- 15 g baking soda
- course sea salt
Instructions
- Combine the flour, salt, sugar, yeast and warm water in a medium bowl then knead the dough for about ten minutes until soft and smooth.
- Cover the bowl and let the dough rise for 30 minutes.
- Once the dough has risen, preheat the oven to 230°C degrees and line a baking sheet with parchment paper.
- On a lightly floured counter top, divide the dough into eight pieces and roll each piece in to a long rope then shape each rope in to a pretzel.
- In a bowl mix together the baking soda and water and heat in the microwave until warm then dip each pretzel into the water and place on the prepared baking sheet.
- Sprinkle the pretzels with salt and let rest for 10 minutes.
- Bake the pretzels for 10-12 minutes until golden brown.
