Recipe: Red Pepper Soup

If you feel like you want a delicious soup but you also want something just a little bit different then this red pepper soup will fit the bill. With a little bit of cream or soft cheese and a squeeze of lemon at the end it’s hearty but not heavy and goes well with some toast or crusty bread.

Ingredients
  1. 30g butter
  2. 4 red bell peppers, chopped
  3. 1 onion, chopped
  4. 4 cloves garlic, minced
  5. 700ml broth (vegetable or chicken)
  6. 1/2 tsp: paprika, black pepper, marjoram
  7. optional for finishing: cream, soft cheese, fresh lemon juice, balsamic vinegar
Instructions
  1. Melt the butter in a large saucepan over medium heat.
  2. To the butter add the red bell pepper, onion and garlic and saute for 10 minutes until it starts to gain color.
  3. Pour in the broth and reduce heat to low and simmer for 30 minutes. Transfer to a blender and puree until smooth.
  4. Stir in spices and any optional finishing elements.
Notes
  1. You can strain this too if you really perfectly smooth soups.
