Recipe: Roast Drumsticks with Potatoes and Carrots

This all on one tray dinner is perfect for a busy night since the prep takes no more than about 10 minutes. The cook time in a bit longer than most nights allow but if you get home early or no one is hungry this is a great recipe for nights like that.

Roasted Drumsticks with Carrots and Potatoes
Serves 4
  1. 8 chicken drumsticks
  2. 6-8 large potatoes, cut in quarters
  3. 5-6 carrots, cut in 1-2 inch pieces
  4. Kosher salt
  5. Black ground pepper
  6. 4 tsp ground pepper or 5 cloves garlic, crushed
  7. ½ tsp paprika (optional)
  8. 3-4 Tbsp olive oil.
  1. Preheat oven to 375°F and grease a baking dish.
  2. Add chicken, potatoes and carrots to the lined baking dish and sprinkle with salt, ground pepper and garlic. Drizzle with olive oil. Toss everything to coat.
  3. Place in the oven and bake for 1 hour 15 minutes, checking if potatoes can be easily pierced is a sign of doneness.
