Recipe: Rogan Josh

Rogan Josh is fairly simple curry that contains yogurt and spices. It’s got a very rich, creamy texture and has a ton of flavor. While it may look like there is a lot of spice in there it’s actually very well balanced and not overpowering at all. It’s also very simple though it does have a long, slow cooking period – I might try it in the slow cooker because of this.

Serves 6
  1. 2 cm fresh ginger, grated
  2. 5 garlic cloves
  3. 1-1.5 cups water
  4. 5 tablespoons vegetable oil
  5. 1.5 lbs meat (chicken or lamb is best)
  6. 1.5 teaspoon cardamom
  7. 2 bay leaves
  8. 1/2 teaspoon cloves
  9. 1 teaspoon pepper
  10. 2 teaspoon cinnamon
  11. 2 onions
  12. 1 teaspoon ground coriander
  13. 2 teaspoons cumin
  14. 4 teaspoons paprika
  15. 1 teaspoon cayenne pepper
  16. 1 teaspoon salt
  17. 6 tablespoons plain yogurt
  18. 1/2 teaspoon garam masala
  1. Heat oil in a large stock pot. When hot put in the onions. Stir and fry for 5 minutes until they turn a medium brown colour.
  2. Put in all of the spice except the garam masala and mix until completely coated.
  3. Add the cubed meat in and brown for 5-10 minutes.
  4. Then add the yogurt, a tablespoon at a time until completely incorporated. Stir and fry for another 3 minutes.
  5. Now add the water, bring to the boil, cover, and turn heat to on low.
  6. Cook on low for an hour making sure to stir the mix every 10 minutes.
  7. When the meat is tender take off the lid, turn the heat up to medium, and boil away some of the liquid if desired.
  8. Once done, sprinkle the garam masala and black pepper over the meat before you serve.
