Recipe: Salted Cod Balls

I made these for my Eurovision party on account of Eurovision was in Portugal this year and after spending a week there last year I fell in love with salted cod, locally known as bacalhau. While I had to make my own salted cod it doesn’t involve more than just a little time and a lot of salt. You can skip that part if you really want to save time and just make sure to thoroughly salt your mashed potato mixture instead.

These deep fried balls are part cod and part mashed potato, but 100% delicious.

Ingredients
  1. 400g salted cod, shredded
  2. 400g potatoes, boiled and mashed
  3. 1 onion, diced
  4. 2 cloves garlic, minced
  5. 1/2 teaspoon cayenne pepper
  6. 3 tablespoons cilantro, minced
  7. 3 tablespoons parley, minced
  8. 2 large eggs
  9. 200g breadcrumbs
  10. salt and pepper, to taste
  11. 750ml oil for frying
Instructions
  1. In a hot frying pan with 1 tsp of oil, saute the onion and garlic until softened.
  2. In a large bowl add the cod, potatoes, onion/garlic mixture, eggs, herbs and spices and mix well.
  3. Shape the mixture into 4 or 5 cm balls and roll each of the balls in the breadcrumbs. Place on a plate or sheet until ready to cook.
  4. Heat the oil to 180°C and then deep fry the cod fish balls in small batches for about 5 minutes, rotating if necessary, until completely browned. Repeat until all of the balls are fried.
