Recipe: Sausages with Vegetables

A really classic recipe that’s so simple it almost doesn’t need a recipe. You can use any type of sausage from tofu to 8 types of meat all shoved together and the vegetables are also pretty flexible as long as you add them to the pan in the right order and cut them to roughly the same size you’ll get this great centerpiece of a meal.

  1. 4 sausage links
  2. 1 red pepper, diced large
  3. 2 carrots, diced
  4. 1 potato, diced large
  5. 100g snap peas, cut in half
  6. 100g green peas
  7. 2 tomatoes, diced
  8. 1 small onion, finely diced
  9. olive oil
  10. seasoning to taste: black pepper, salt, basil, red pepper flake, etc.
  1. In a Dutch oven or other tall walled pan, heat the olive oil and then gently cook the sausage until they completely brown on one side. Flip and cook until the other side is also brown.
  2. Remove the sausages from the pan and set aside, add to the oil and sausage fat the onions and peppers and allow to cook for 2-3 minutes.
  3. Add the potatoes and carrots to the pan and cook another 5-6 minutes
  4. Add the snap peas, green peas, and tomatoes with a little salt and a small amount of water to coat the bottom of the pan and cook until all the vegetables are soft, about 8-10 minutes.
  5. Turn the heat off and add the sausage back either whole or cut up, allow to mix together, add seasoning to taste, and serve hot.
  1. Mix any combination of vegetables or even use frozen vegetable mixes if you want but for best results use fresh and add them in order of cooking time.
