Recipe: Sauteed Corn Salad

I’m always looking for really simple side dishes because it’s just hard to get motivated to cook more than mains and this roasted corn dish can be made with frozen or canned corn even making it a super simple way to round out a meal. I was hesitant to put olive oil and butter in to the dish but I think the extra flavor really makes a difference.

Sauteed Spicy Corn Salad
Serves 4
Crunchy and sweet and spicy, this "salad" brings together a good meal.

  1. 1 tablespoon olive oil
  2. 1 small red onion, finely diced
  3. 1 tablespoon unsalted butter
  4. 250g corn (fresh, frozen, or canned)
  5. 1 red bell pepper, finely diced
  6. 2 tablespoons Sriracha
  7. 3 tablespoons cheese crumbles
  8. 1 lime, juiced
  9. salt and pepper, to taste
  1. Heat olive oil in a fry pan over medium heat.
  2. Add onion and cook, stirring occasionally, until tender.
  3. Add butter, pepper, and corn and saute about 5 minutes, until golden.
  4. Remove from heat and add the Sriracha, cheese, and lime juice and season to taste.
