Recipe: Scallion Pancakes

These are like naan on steroids. They’re very unassuming but they were super quick to make and absolutely delicious. I didn’t do a great job at pan frying but they still were crispy and crunchy and completely satisfying. I made the dough the night before and then fried them up in the morning so that’s an option if you’re a little low on time or you like to last minute cook in the morning.

Scallion pancakes are an easy, cheap, and deliciously crispy - perfect as a side dish but good enough to eat alone

Ingredients
  1. 200g flour
  2. 1/2 teaspoon chicken bouillon powder
  3. 125ml water
  4. 3 – 4 green onions (scallions), green parts only, trimmed and cut into small rounds
  5. Some additional all-purpose flour, for dusting and rolling
  6. Oil, for frying
Instructions
  1. Mix all of the ingredients except the oil together in a bowl until it forms a dough. Add a little more flour or water until the dough pulls away from the bowl.
  2. Add a small amount of oil (or butter) in a frying pan over fairly hot heat.
  3. Take a fist sized piece of dough out, using a rolling pin or your hand flatten the pancake to a circle 1/8" width.
  4. Transfer the pancake into the pan and fry each side of the pancake to a light golden brown, about 1 minute.
  5. Add oil (or butter) and repeat until dough is completely used.
