Recipe: Shortcut Samosa

These are shortcut samosas and are actually hardly samosas at all really but they’re still pretty good for “kind of curry-like food stuffed in a puff pastry which mildly resembles samosa” and they can be fried or baked depending how you feel about it.

Still a small amount of fiddling but much less work samosas that go with any chutney or perfectly on their own.

  1. 3 tbsp butter
  2. 1/2 onion, minced
  3. 1 jalapeno, minced
  4. 2 tsp grated ginger
  5. 1 tsp cumin
  6. 1 tsp garam masala
  7. 1/2 tsp turmeric
  8. 1/4 tsp cayenne
  9. 1 1/4 tsp salt
  10. 400g potato, boiled and mashed
  11. 1/3 cup frozen peas
  12. 500g puff pastry, thawed
  1. In a saucepan over medium heat melt the butter with the onions and cook until they begin to brown, about 8 minutes.
  2. Add the jalapeno and ginger, and other spices and cook for 1 minute until fragrant.
  3. Add the mashed potato and frozen peas and heat through then cool the mixture completely.
  4. Once filling is cooled, line a baking sheet with parchment paper and heat over to 190°C.
  5. Make the samosas by rolling the puff pastry in to a square and cutting 12-15" diameter circles.
  6. Cut the circles in half, spoon filling on to the bottom portion, then fold the half circle and press to seal.
  7. Repeat until all the puff pastry and potato mixtures is used.
  8. Bake the samosas for about 15-20 minutes, until browned.
