Recipe: Simple Bean Soup

A nice hearty beans and greens type soup that sticks to your ribs in cold weather. Hearty enough to be a meal when paired with some bread or a salad but light enough to be a side dish for a roast dinner too.

Ingredients
  1. 2 olive oil
  2. 2 carrots, chopped
  3. 2 stalks celery, chopped
  4. 1 onion, chopped finely
  5. 2 cloves garlic, minced
  6. 1 can beans (your choice)
  7. 1 can diced tomatoes
  8. 1 tsp dried basil
  9. 1/2 tsp oregano
  10. to taste, salt and pepper
  11. 500ml vegetable broth
  12. 150g fresh spinach
  13. Parmesan, to taste
Instructions
  1. Heat oil over medium-high heat in a Dutch oven or stock pot.
  2. Add carrots, onion, celery and garlic and cook about 5 minutes until onion becomes soft.
  3. Add to the pot the beans, tomatoes, basil, oregano, salt, pepper and broth. Cover; simmer about 30 minutes until vegetables are tender.
  4. Then stir in spinach cook just until spinach is wilted then serve and top with cheese to taste.
