Recipe: Slow Cooker Greek Chicken

A super easy slow cooker meal that is hearty enough to be eaten right out of the crockpot by itself or made even more filling with some mashed potatoes, rice, salad, or pasta as a side. If you don’t want to spend the 2 minutes when it’s done removing the bones out of the pot you can use boneless, skinless thighs too but the flavor is about 20% less intense that way.

Slow Cooker Greek Chicken
Serves 4
  1. 1 lb. green beans
  2. 3 large tomatoes, diced or one 14 oz can
  3. 1 onion, diced
  4. 2 cloves garlic, minced
  5. 1/4 cup fresh chopped dill
  6. juice of one lemon
  7. 1 cup chicken broth (or vegetable broth or water)
  8. 4 bone-in, skin-on chicken thighs
  9. salt and pepper, to taste
  10. 2 tablespoons olive oil
  1. Mix together the green beans, tomatoes, onion, garlic, dill, lemon juice, broth, salt and pepper in your slow cooker.
  2. Lay the chicken thighs skin-side-up on top of the green bean mixture.
  3. Drizzle the tops of the chicken thighs with olive oil and season with more salt and pepper.
  4. Cook on low for 8 hours or high for 4 hours.
