Recipe: Snickerdoodle Brownies

I made these because I wanted to cheer a friend up and she loves snicker doodles and brownies and I though it’d be fun to sort of mix it up and do both at the same time. I’m unsure when things leave the realm of brownie and start to enter the “blondie” zone, but it’s entirely possible that these are actually some form of blondie. That said, these are delicious! I overbaked them about 2 minutes but this is the perfect food for when you want a brownie but you’re not really feeling in to chocolate [or if you’re allergic!].

Snickerdoodle Brownies
Yields 12
  1. 1 cup unsalted butter, at room temperature
  2. 2 cup packed brown sugar
  3. 2 eggs, at room temperature
  4. 1 tablespoon vanilla
  5. 1 2/3 cups flour
  6. 2 teaspoons baking powder
  7. 1 teaspoon salt
  8. 2 tablespoon white sugar
  9. 2 teaspoons ground cinnamon
  1. Preheat oven to 350°F and grease a 13" x 9" baking dish.
  2. Cream butter in a large mixing bowl then beat in brown sugar, eggs and vanilla until smooth.
  3. To that add the flour, baking powder and salt and mix only until combined.
  4. Spread the batter evenly in the prepared baking dish and set aside for a minute.
  5. In a small bowl, combine the white sugar and cinnamon and sprinkle the mixture evenly over the batter.
  6. Bake for about 25 - 30 minutes until golden brown and a toothpick comes back clean when inserted.
