Recipe: Soft Chocolate Cookies

A simple and delicious chocolate cookie that comes out chewy and not too sweet.

Soft Chocolate Cookies
Yields 12
  1. 1/3 cup butter
  2. 1/3 cup finely chopped unsweetened chocolate (2 oz)
  3. 1 cup sugar
  4. 2 eggs
  5. 1 tsp vanilla extract
  6. 3/4 cup flour
  7. 1/4 cup cocoa
  8. 1 tsp baking powder
  9. 1/4 tsp salt
  10. 1/3 cup white chocolate chunks
  1. In a microwaveable bowl, combine butter and unsweetened chocolate and microwave in 30 second intervals until melted
  2. Place the chocolate and butter in the mixing bowl and stir in sugar, eggs and vanilla extract.
  3. To that bowl slowly add and mix the flour, cocoa, baking powder and salt until well combined.
  4. Stir in white chocolate chunks. Refrigerate at least 2 hours, or overnight.
  5. To bake: preheat oven to 350 degrees and drop dough by heaping tablespoonfuls 2 to 3 inches apart.
  6. Bake 10-12 minutes until soft and cracking, remove from oven and cool before eating

    Cookies taste great, rich chocolate flavor and have a nice consistency. I used pecans instead of chips – that was a bad idea. They would be much better with melty chips in them.
