Recipe: Soft Prezel Twists

With simple ingredients you probably have laying around the house these pretzels bring a wow factor to a boring side dish of bread. Great with soup or made in to a bun shape for sandwiches they are fluffy and rich with a homey flavor.

Salted Pretzel Twists
Yields 4
  1. 2 1/2 cups unbleached bread flour
  2. 1 teaspoon salt (fancy salt if you're feeling fancy)
  3. 1 teaspoon sugar
  4. 2 1/4 teaspoons instant yeast
  5. 1 cup warm water
  6. butter
  7. salt to top (optional)
soaking bath
  1. 2 tbsp. baking soda
  2. 1 cup boiling water
  1. Pre heat oven to 475 degrees
  2. In a mixer with a dough attachment, mix all ingredients well then knead for 5 minutes. Allow dough to rest 30 minutes.
  3. Mix baking soda with boiling water in a large flat bowl allow to cool while dough rest.
  4. Remove dough from bag and on a lightly greased surface roll dough into a log. Cut dough into four pieces and then cut the pieces in half. You should have 8 pieces of dough. Roll each piece of dough into a long thin log about 10-12 inches and then take two of the thin logs and pinch the end of one side of the log then twist the two pieces together, pinching the other end when you reach it.
  5. Add all 4 logs to the soaking bath and baste the logs for two minutes with soaking liquid.
  6. Remove logs from soaking liquid and place on a greased baking sheet and allow to rest for 10 minutes.
  7. Bake pretzel twists at 475 degrees for 10-12 minutes, remove from oven and baste with as much butter as you like. Sprinkle with some decorative salt if desired.
