Recipe: Spinach Mini Puffs

Super simple recipe that makes the perfect party appetizer, it probably took 15 minutes all together to make them and they’re cheap enough to be good for a last minute party without breaking the bank. These pretty much disappeared in 30 minutes after serving, so quickly that I didn’t even get to eat one!

Spinach Mini Puffs
Yields 24
  1. 2 sheet of puff pastry, defrosted
  2. 18 oz frozen spinach, defrosted
  3. 2 tbsp lemon zest
  4. 1/2 cup freshly grated Parmesan cheese
  5. 4 oz goat cheese
  6. Salt and pepper, to taste
  7. 2 tsp dried herbs
  8. olive oil
  1. Unwrap your defrosted puff pastry and use a sharp knife to cut each sheet along the seam into 3 long pieces. Then cut each strip into quarters, so you will wind up with 24 squares.
  2. Mix together all of the other ingredients in a bowl.
  3. Take each puff pastry square and place it into a mini muffin tin and fill with a teaspoon a scoop of the filling into the puff pastry cups then take the corners of the pastry and gently fold over and close.
  4. Bake at 350 degrees F for 20 minutes or until the pastry begins to get golden brown. Then remove from oven and allow to cool a bit before serving.
