Recipe: Split Pea Soup

This simple homey soup is perfect for a budget meal. Paired with a salad or some bread it’s a perfect meal. You can puree the soup if you like it smooth but I like the texture. You can easily add or subtract potato to change the consistency of it as well.

Split Pea Soup
Serves 6
  1. 1 medium onion, diced
  2. 2 celery ribs, diced
  3. 2 cloves garlic, diced
  4. 1 cup carrots, cut in to 1/4" rounds
  5. 1/2 large potato
  6. 2 cups dried split peas
  7. 6 cups vegetable broth
  8. 1/2 tsp each oregano, dill, thyme and marjoram
  9. 1/4 tsp paprika
  10. salt and pepper, to taste
  1. Heat a large pot over medium heat and to it add onion, celery, carrots with 1/2 cup of the broth, cook 10 minutes until soft.
  2. Add the garlic, spices, split peas, and potato and turn heat down to a simmer.
  3. Simmer covered for 45 minutes covered until green peas are soft and then puree if desired or don't and serve hot.
