Recipe: Squash and Black Bean Chili

A quick filling chili that gets the job done. This is even more delicious with a nice heaping of sour cream and hot sauce or some crunchy tortilla chips / pieces to jazz it up. It packs good flavor on its own and has a bunch of textures but it just needs a little something to make it pop.

Ingredients
  1. 1 medium squash, peeled, seeded & diced
  2. 1 red onion, diced
  3. 1 red bell peppers, diced
  4. 3 large cloves garlic, minced
  5. 2 tablespoons chili powder
  6. 1 teaspoon chipotle powder, or to taste
  7. 1 teaspoon cumin
  8. 1/4 teaspoon cinnamon
  9. 1 can black beans, drained
  10. 1 can crushed tomatoes
  11. 450ml vegetable broth
  12. salt and pepper, to taste
  13. garnishes (optional)
Instructions
  1. In a dutch oven or large pot, add olive oil and add the squash, cooking until it begins to brown.
  2. Add to the squash the onion, bell peppers and garlic and cook until onions are soft and translucent, about 5-7 minutes.
  3. Add to that mixture the spices, beans, tomatoes and broth, bringing the mixture to a boil and then simmering covered for 20-30 minutes, stirring ocassionally.
  4. Chili is ready when squash is tender, adjust seasoning and serve hot with garnishes.
