Recipe: Taco Skillet

Basically just a fancy (or non-fancy) name for a taco bowl or burrito bowl of fajita bowl whatever we’re calling it now a day. This is a super simple one skillet meal that you dress up however you like. This is hearty dish that is easily served over rice or even Fritos depending how you feel that day.

Ingredients
  1. 1 lb minced chicken
  2. 1/2 red onion chopped
  3. 1 medium green pepper chopped
  4. 1 medium red pepper chopped
  5. 15 oz can black beans drained and rinsed
  6. 1/2 cup frozen corn thawed
  7. 1 Tablespoon olive oil
  8. 3 Tablespoons taco seasoning
  9. 4 oz mixed cheese
  10. optional serving extras: rice, salad mix, sour cream, tomatoes, fritos, tortilla strips, really anything
Instructions
  1. In a large skillet, heat the olive oil and cook the onion, garlic and peppers until the onion is translucent and the peppers are soft.
  2. Add the black beans, corn, and chicken. Combine and cook further until chicken is no longer raw. Add the tomatoes and sprinkle with cheese.
  3. Serve any which way you like.
