Recipe: Tomato Cream Sauce

This is a sauce that combines vegetables with fresh and canned tomatoes to give an extra punch and a little bit of cream that makes it so silky smooth you will want it on everything. This sauce turns out fairly chunky but you can puree if it if you prefer smooth sauces.

Tomato Cream Sauce
Serves 4
  1. 2 tablespoons olive oil
  2. 1 onion, diced
  3. 1 green pepper, diced
  4. 4 fresh tomatoes, diced
  5. 1 can diced tomatoes, undrained
  6. 1 cup mushrooms, diced
  7. 1 clove garlic, minced
  8. 1 tablespoon dried basil leaves
  9. 1/4 teaspoon dried oregano
  10. 1/4 teaspoon salt
  11. 1/8 teaspoon ground black pepper
  12. 1/4 cup heavy cream
  13. 1 tablespoon butter
  1. In a saucepan, saute onion and garlic in olive oil over medium heat.
  2. To that add all the vegetables, garlics, basil, oregano, salt and pepper. Bring to boil and continue to boil 5 minutes or until most of the liquid evaporates.
  3. Reduce heat to lowest, stir in whipping cream and butter and gently simmer 5 more minutes.
