Recipe: Turkey Meatloaf

A really simple meatloaf that turns out delicious. Serves about 6 good slices, meaning plenty of leftovers. It comes out really moist and I’d definitely brush the top with more ketchup for serving.

Turkey Meatloaf

  1. 1 large onion
  2. 1 tablespoon minced garlic
  3. 1 teaspoon olive oil
  4. 1 medium carrot
  5. 3/4 pound mushrooms, chopped finely
  6. 1 teaspoon salt
  7. 1/2 teaspoon black pepper
  8. 1 1/2 teaspoons Worcestershire sauce
  9. chopped fresh parsley
  10. 1/4 cup plus 1 tablespoon ketchup
  11. 1 cup bread crumbs
  12. 1/3 cup milk
  13. 2 eggs
  14. 1 pound ground turkey
  1. Cook onion and garlic in oil in a 12-inch nonstick skillet over moderate heat until onion is softened, then add carrots, mushrooms, and a touch of salt and pepper and cook until mushrooms are very tender, 10 to 15 minutes.
  2. Stir in Worcestershire sauce, parsley, and 3 tablespoons ketchup, then transfer vegetables to a large bowl and cool.
  3. Once cool add bread crumbs, milk, and eggs, to vegetables. Finally, add turkey and remaining salt and pepper then mix well with your hands.
  4. Form into a 9- by 5-inch oval loaf in a lightly oiled 13- by 9- by 2-inch metal baking pan and brush meatloaf evenly with remaining 2 tablespoons ketchup.
  5. Bake at 400 for 50-60 minutes or until completely cooked in the middle.
