Recipe: Turkey Pinwheels

So this is a sort of non-recipe but I love it so much! I had these in the store at about $5 for a pack of 6 and I figured I could probably make them myself for 1/4 of that price and then I did! These are perfect for lunch, snacking, picnics, or just easily whipping up dinner in 3 minutes.

Turkey Pinwheels
Serves 4
  1. 1/2 cup cream cheese
  2. 4 wrap-size flour tortillas
  3. 2 cups lettuce mix
  4. 1 (8-ounce) package turkey breast slices
  5. 1/2 pepper, cut in to 1/2" sticks
  6. a sprinkle of seasoning mix
  1. Spread 2 teaspoons of the cream cheese over entire surface of each tortilla and top cream cheese with 1/4 cup lettuce mix.
  2. Place 2 slices of turkey on 1/2 on each tortilla.
  3. In a line place the peppers (or carrots or both!) on top of the turkey slices.
  4. Sprinkle with salt/pepper or seasoning mix then roll the tortillas starting at the edge where you placed the turkey and cut the roll in to 1" slices.
