Recipe: Turkey Sweet Potato Chili

I’m very non-committal about chilis. I think I like them but maybe I don’t because I’ll go 3 or 4 months before making another one. This one though was very tasty on a cool night. I also like putting sweet potato in things so that’s always a plus.

Turkey Sweet Potato Chili
Serves 4
  1. 1 tablespoon oil
  2. 1 pound ground turkey
  3. 2 sweet potatoes, cubed
  4. 1 onion
  5. 2 cloves garlic
  6. 2 tablespoons chili powder
  7. 1 teaspoon cumin
  8. 1 teaspoon coriander
  9. 1 teaspoon dried oregano
  10. 1/4 teaspoon red pepper flakes
  11. 1 can diced tomatoes
  12. 1 1/2 cups chicken stock
  13. 1 can black beans
  14. 1 can kidney beans
  15. salt and pepper, to taste
  1. Heat the oil in a large saucepan over medium heat. Add the turkey and cook, breaking it up well with a wooden spoon, until no longer pink, about 5 minutes.
  2. Add the sweet potatoes, onions and garlic, and cook, stirring frequently, for 5 minutes. Add seasonings, from the chili powder to the red pepper flakes, if using, and cook for 1 minute. Add the tomatoes with their juice and the chicken broth. Bring mixture to a simmer, cover the pan, and cook for 10 minutes, stirring occasionally. Meanwhile, rinse and drain the beans. Set aside.
  3. Remove the cover, stir in the beans and simmer mixture until the potatoes are completely tender and the chili has thickened, about 20 minutes. Season, to taste, with salt and pepper. Serve hot.
