Recipe: Breaded Eggplant

I’ve never really been a huge fan of eggplant but this recipe completely won be over. It’s probably even better fried but there’s almost nothing on earth that isn’t good when breaded and fried, is there?

Baked Breaded Eggplant
Serves 4
  1. 1 eggplant
  2. 1.5 cups breadcrumbs
  3. 1/4 cup milk
  4. 1 egg
  5. 1 cup flour
  1. Slice the eggplant in to thin slices.
  2. Set out three bowls: one with flour, one with the egg and some milk mixed in, and one with breadcrumbs.
  3. Coat with flour, then the egg mixture, then the breadcrumbs.
  4. Coat a baking sheet with cooking spray and place each breaded slice on the sheet.
  5. Cook for 40 minutes on 400°F, flipping half way.
  1. Eat dipped in marinara sauce.
