Recipe: Vanilla Cake with Earl Gray Buttercream

This is a basic vanilla cake jazzed up with a fun frosting. The cake is a little denser than usual but it has a very moist crumb and the buttercream is subtle and smokey. Be sure to use good quality tea for the best flavor.

  1. Cake
  2. 200g sugar
  3. 195g flour
  4. 6g baking powder
  5. 8g salt
  6. 85g butter, softened
  7. 7g vanilla extract
  8. 2 eggs
  9. Buttercream
  10. 200g unsalted butter, at room temperature
  11. 150g powdered sugar
  12. a pinch of salt
  13. 20-30 ml over steeped tea (15g loose earl gray + 50ml boiled water)
  1. Preheat the oven to 175°C and grease a 8" or 9" round tin.
  2. In a large mixing bowl, whisk together the sugar, flour, baking powder, and salt.
  3. To the dry mix add the butter and beat with an electric mixer at low speed then add the milk, vanilla, and eggs and beat until combined.
  4. Pour the batter in to the pan and smooth the top out.
  5. Bake for 30-35 minutes until golden brown and a toothpick comes out clean from the center of the cake. Make frosting while cake is cooling.
  6. To make frosting: With an electric mixer, beat the butter until it becomes pale and creamy.
  7. Add the powdered sugar and salt and beat on low until combined.
  8. Add the over steeped tea a few ml at a time until you reach the desired consistency.
  9. Frost the cake when completely cool and serve.
  1. Makes a single 8-9" round cake and enough buttercream to coat it generously.
