Recipe: Vegetable and Chickpea Curry

While it’s not the most visually pretty this is a delicious and super simple vegetable curry made unique and lovely with the inclusion of chickpeas. The whole thing gets thrown in the slow cooker for a super easy and fairly healthy meal. You can add more vegetables as desired these were really just the ones we had on hand.

Vegetable and Chickpea Curry
Serves 4
  1. 2 cups cauliflower
  2. 2 cups broccoli
  3. 1 green pepper
  4. 1 onion
  5. 15 ounces canned chickpeas
  6. 15 ounces tomato sauce
  7. 1 cup chicken broth
  8. 1 tablespoon cumin
  9. 1 tablespoon curry powder
  10. 1 tablespoon turmeric
  11. 1/2 teaspoon cayenne
  12. salt and pepper to taste
  1. Place vegetables, chickpeas, tomato sauce, chicken broth and spices in the slow cooker and cook on low for 8 hours
  2. Check for seasoning and adjust accordingly then serve over rice or grain of choice
