Recipe: Vegetable Hash

This hash is super simple and can easily be doubled or tripled for a crowd. I like mine with ketchup but this would be good with hot sauce, vinegar sauces, or any number of things. Easily, you add a fried egg or avocado at the end to really class it up.

Vegetable Hash
Serves 4
  1. 3-4 medium size potatoes, diced
  2. 1 red bell pepper, diced
  3. 1 zucchini, diced
  4. 1/2 onion, diced
  5. 1 cup grape tomatoes, sliced in half
  6. 1-2 cloves garlic, diced
  7. 1 Tbsp extra virgin olive oil
  8. 1 Tbsp dried italian seasoning
  9. salt & pepper to taste
  1. Parboil the potatoes: In a saucepan, add diced potatoes, fill with enough water to cover them and boil for about 10-15 minutes then drain the potatoes and set aside.
  2. Heat a frying pan with a small pat of butter (or olive oil if you prefer) and once hot add the garlic, pepper, zucchini, and onion and let saute for about 5 minutes until soft.
  3. Add the seasoning and tomatoes, stir for about a minute then lower to heat to medium and add the potatoes.
  4. Cook about 5 minutes on each side until potatoes start to brown.
