Recipe: Vegetable Korokee

Korokee is the Japanese word for Croquettes. And these ones are delicious. They’re usually deep fried but these baked ones are a lot lighter, they’re perfect for a snack or a mid day pick me up.

Vegetable Korokee
Serves 8
  1. 4 potatoes, boiled and mashed
  2. 2 carrots, finely diced or shredded
  3. 1/2 onion, finely diced
  4. 1 cup green peas
  5. 2 tbsp mirin
  6. 2 tbsp soy sauce
  7. salt and pepper to taste
For Breading
  1. 2 eggs, beaten
  2. 1 cup breadcrumbs
  1. Prepare all your vegetables, boil and mash the potatoes and dice the carrots and onions.
  2. To the mashed potatoes add the rest of the vegetables, the mirin, soy sauce, and spices.
  3. Heat an oven to 400° and line a baking sheet with parchment
  4. Prepare your breading station with the eggs and breadcrumbs in seperate bowls then roll the potato mixture in to shapes (I choose oblong) and coat with egg and then breadcrumbs and place on a baking sheet.
  5. Repeat the rolling and breading process until all of your mixture is used then bake for 20-25 minutes.
