Recipe: White Chocolate and Pistachio Kulfi

Kulfi is a delicious dessert that is halfway between a popsicle and western style ice cream. This is so similar to a popsicle that you can use those pop makers to freeze these in to shape. I just used to a simple tupperwear container and cute squares for service.

White Chocolate and Pistachio Kulfi

Ingredients
  1. 4 cups whole milk
  2. 1 cup heavy cream
  3. 1/2 cup sugar
  4. 1/2 cup white chocolate chips
  5. 6 cardamom pods
  6. 1/1 cup pistachios, chopped
Instructions
  1. Crush cardamom pods in a mortar.
  2. Heat milk and crushed cardamom pods together in a pan; bring to boil, then simmer vigorously until liquid is reduced to 1/3 of original amount, this takes about 15-20 minutes.
  3. Strain to remove cardamon, then stir in the sugar and chocolate chips until melted.
  4. Add pistachios then pour the Kulfi mix in to a container to place in the freezer for at least 30 minutes.
  5. Stir the kulfi mixture every 30 minutes for at least 2 hours.
  6. After the mix has been stirred enough, pack the mixture into cups or popsicles or leave in tupperwear overnight to freeze fully.
