Recipe: White Chocolate Cheesecake

This white chocolate cheesecake is dense and delicious and that extra something. Also it’s a one bowl dessert and it tops well with any fruit or chocolate sauce.

Ingredients
  1. Graham Cracker Crust
  2. 6 tablespoons (3 oz , 90g) butter, melted
  3. 1 1/2 cup graham cracker crumbs (about 10 crackers)
  4. 1/4 cup (2 oz, 60g) granulated sugar
  5. 1/2 teaspoon ground cinnamon
  6. Cheesecake
  7. 1 lb (16 oz, 455g) cream cheese, softened
  8. 1/2 cup (4 oz, 120g) granulated sugar
  9. 1 cup (8 oz, 230g) sour cream
  10. 2 teaspoons vanilla extract
  11. 8 oz (230g) white chocolate, melted
  12. 3 eggs plus 1 yolk, whisked together with a pinch of salt
To make the Crust
  1. Combine the cracker crumbs, cinnamon and sugar in a small bowl with the melted butter.
  2. Pour the melted butter over the crumbs and toss to combine
  3. Dump the crumbs into the cake pan and press into an even layer with the back of a spoon.
To make the Cheesecake
  1. Combine the softened cheese and sugar in a mixing bowl until it's soft and whipped.
  2. Add to the bowl, the sour cream, white chocolate, and vanilla and mix to combine.
  3. Add the eggs in one at a time and mix gently.
  4. Pour the batter into the cake pan, and bake for 40 minutes until the top browns and the middle jiggles only a little.
