Recipe: Zucchini Fries

I’ve made this twice but haven’t been able to get a picture of it because of how quickly they get eaten (so quickly!). It’s your basic fries recipe but I make them in the oven and I also have a special trick for coating them with almost no fuss.

Zucchini Fries
Serves 4
  1. 2 tablespoons all-purpose flour
  2. 1 large egg
  3. 1 tablespoon water
  4. 1 cup breadcrumbs
  5. 1/4 cup grated cheese (Parmesan, Gruyere, Cheddar, whatever you have on hand)
  6. 1/4 teaspoon kosher salt
  7. 1/4 teaspoon garlic powder
  8. 1/8 teaspoon cayenne pepper
  9. 1/2 lb zucchini
  1. Heat the oven to 425 and line a baking sheet with aluminum foil.
  2. Combine the egg and water together in a shallow dish, and beat lightly with a fork.
  3. Now add the flour, cheese, and spices to a plastic bag.
  4. Cut the zucchini it in about 3 inch pieces of your favorite shape, I enjoyed cutting them diagonally because it makes them look fancy.
  5. Now for the breading process: Roll the zucchini in the egg mixture then add the zucchini to the resealable bag and shake to coat them evenly. Then place the coated fry on the pan. Repeat until all zucchini slices are covered. You can also add a bit of extra cheese on the top for extra brownness.
  6. Bake for about 20 minutes, or until the coating is golden brown and crisp.
