Recipe: Zucchini Fritters

If you don’t mind shredding the zucchini this recipe is such a breeze. It makes a great appetizer, finger food for parties, or even a main course if you serve it with a couple of sides (it’d be really nice with a side of soup on a cold day). While it’s important to get most of the moisture out of the zucchini because I was baking them instead of frying I didn’t really spend too much extra effort of this and they turned out fine – they did need a little bit extra baking time but you can easily adjust for this. They’re like potato pancakes in a way, very light and fluffy!

Zucchini Fritters
Serves 8
  1. 2 cups grated zucchini
  2. 1 clove garlic, minced
  3. 1/4 cup chopped onion
  4. 1/4 cup flour
  5. 1/4 cup breadcrumbs
  6. 1/4 cup parmesan cheese, shredded
  7. 1 egg
  8. garlic, salt, and pepper
  1. Preheat oven to 400 degrees and lightly oil a baking sheet.
  2. After grating the zucchini used paper towels to squeeze out the excess liquid.
  3. In a medium bowl mix the grated zucchini, garlic, onion, flour, breadcrumbs, cheese, egg, and spices until combined.
  4. Form the zucchini mixture in to patties and bake for 20 minutes then flip the patties and bake for another 15 minutes.
