Recipe: Shrimp Fajitas

Shrimp Fajitas sound fancy but this recipe is great. You can either prep all the ingredients raw and leave them in a tupperwear to toss in the oven when you get home after work for a quick 15 minute dinner OR you can cook them ahead of time and toss them in the microwave (some people don’t like to reheat shrimp but for me, I don’t really mind personally). You can serve these just over rice or go whole hog with tortillas, cheese, guacamole, sour cream, and all the toppings your heart desires. It’s as complicated as you want it to be!

Shrimp Fajitas
Serves 4
  1. 1 pound shrimp, peeled
  2. 1 red bell pepper, thinly sliced
  3. 1 green bell pepper, thinly sliced
  4. 1 onion, thinly sliced
  5. 2 tablespoons olive oil
  6. 2 tablespoons taco seasoning
  7. Juice of 2 limes
  8. 1/4 cup cilantro leaves
  1. Preheat oven to 400 degrees F and cover a baking sheet with tinfoil sprayed with non-stick coating.
  2. Toss all the ingredients in a bowl to combine.
  3. Place the mixed ingredients on the baking sheet and cook for about 12-15 minutes.
